Apples have a specific characteristic that must be considered when organizing their transportation: the release of ethylene, a phytohormone that accelerates ripening. These fruits are among the highest ethylene producers, which is why their shipment comes with several important restrictions:
- Different apple varieties—especially early and late-ripening ones—cannot be transported together.
- Apples should not be transported with food products like meat or dairy—as they actively absorb the fruit's aroma under ethylene exposure, altering their taste.
- It is not recommended to transport apples alongside certain other fruits—especially peaches, apricots, cherries, or sour cherries—as this proximity will accelerate their ripening.
Finally, loading apples and potatoes into the same truck is prohibited, as ethylene exposure causes the tubers to accumulate harmful compounds and rot.

According to Sanitary Regulations 2.3.6.1066-01, the transportation of apples and other fruits must be carried out in specially equipped vehicles capable of maintaining optimal humidity, temperature, and ventilation levels in the cargo compartment.
